¡Bienvenidos a la fiesta de tamales! Join us for an immersive culinary experience where you'll learn to craft tamales - an ancient food preparation traced back to 8.000 BC mesoamerican peoples. We will make two beloved varieties of tamales: Green Chili Chicken and Black Bean and Cheese. In this hands-on class, you'll dive into the vibrant flavors of traditional Mexican cuisine while mastering the art of tamale-making alongside fellow food enthusiasts.


Course Overview:

Under the guidance of our experienced instructors, you'll embark on a flavorful journey. From preparing masa to assembling and steaming your tamales, each step of the process will be demystified, ensuring that you leave with the skills and confidence to recreate these delicious treats in your own kitchen. 

What You'll Learn:

  • Masa Magic: Discover the secrets to crafting the perfect tamale dough, known as masa, using traditional ingredients like corn flour, lard, and broth. Learn techniques for achieving the ideal texture and flavor balance for your tamales.

  • Fillings: Learn to prepare two mouthwatering filling options: tender Green Chili Chicken and savory Black Bean & Cheese. Master the art of layering flavors and textures to create tamales that are as delicious as they are satisfying.

  • Master Assembly:  Learn the proper techniques for filling, folding, and wrapping your tamales in corn husks, ensuring that each one is perfectly sealed and ready for steaming.

  • Successful Steaming:  Discover the secrets to steaming tamales to perfection, from arranging them in the steamer to achieving the ideal cooking time for tender, flavorful results.

  • Michelada Madness: As a bonus, you'll also learn to whip up a refreshing batch of micheladas – a classic Mexican cocktail featuring beer, lime juice, spices, and hot sauce. Perfect for pairing with your freshly made tamales or enjoying on their own!


Class Format: This interactive class is  hands-on instruction, allowing you to actively participate in every aspect of the tamale-making process. Whether you're a seasoned home cook or new to Mexican cuisine, our instructors will provide personalized guidance to help you master each technique.


Materials Needed: All necessary ingredients and equipment will be provided for use during the class. 


In-class Delights: Each student will enjoy two tamales as a part of class instruction, along with one michelada, glass of wine, or non-alcoholic beverage. Additional beverage service will be available to students participating in the course. 


Take Home Treats: As a delicious souvenir of your tamale-making adventure, each student will take home six freshly made tamales – three of each variety – to enjoy with family and friends.

Candace Beaucar-Need and Sara Minard

Candace Beaucar-Need has over 30 years of experience and is well-known for her beloved Bloomington restaurant Finch's Brasserie, which brought seasonal menus and wood-fired pizza to Bloomington for 14 years. Sara Minard has been teaching cooking classes, food geography, and food anthropology for over 15 years, catering to students aged 3 to 80. Prior to teaching, she worked for over 20 years in the restaurant industry in Madison, WI and Chicago.
